I’ve been getting into the raw food thing, as I’ve been told veggies lose much of their nutrients when cooked. Steaming foods lightly is apparently ok, which is why I had to mention this clever product. From Gaggenau, the German manufacturer of high-end appliances, this Combination Steam and Convection Oven (or CombiSteam Oven) combines the best of convection cooking with the delicate and gentle effects of steam. Users can choose either system or a combination of both, with fully adjustable temperatures from 85 – 450º F. You can even adjust humidity levels, selecting 100%, 80%, 60% and 30%. Not only will steaming foods keep them moist, but it will preserve the all-important nutrients in fragile veggies and foods. The ovens come in various sizes, as well as single or double wall versions. A single 24-inch model runs about $3,000, while a double 27-inch will set cost around $4,800—a price tag that is worth it for veggies that will never again suffer the indignity of harsh cooking.
